Birmingham-based bar operator and drinks company Spirits Of Anarchy have collaborated with sake expert and trainer, Samuel Boulton, to create and release Kabuki Peach Sake.
Samuel describes the new liquid as bridging the gap between a classic sake and a liqueur like Plum sake or Yuzushu:
“The latter are always more popular because they’re sweet but they lack any sake flavour. My idea was to bridge the gap to create a product which will cultivate Sake drinks, not plum wine drinkers. Peach’s (called Momo in Japanese) are synonymous with Japanese culture there is a story of Momotaro (Peach Boy) goes that the boy is born from a peach and, accompanied by a dog, a monkey and a pheasant goes out to defeat the Ogres. This is just one version of the story, however, there are many more. So naturally peach seemed like the right fit. We worked with Kanpai Sake Brewery in London to create a traditional umami-driven sake, to which we add a bit of peach and sugar (only 5%)… This added a subtle peach flavour and some sweetness but retains the heart of a Junmai sake, I really believe this kind of sake is what’s needed to bridge the gap.“
